This recipe takes me right back to those boxed dinners we all remember from the 80’s… but this version is so much better.
It’s simple, comforting, and made with real ingredients—and somehow it still has that same cozy, familiar flavor we grew up with.
This has become one of my oldest daughter Emily’s favorite meals. She loves it so much that she’ll even eat the leftovers for breakfast the next day—which, if you’re a mom, you know is the ultimate compliment.
And of course, I always make it with a little extra love… and make sure she gets to take some leftovers home.
I truly believe meals like this are more than just food. They’re memories, connection, and little moments we get to share with the people we love.
And even in the middle of busy, everyday life… we can still thank Him anyway. 💛

- One-pan, easy weeknight meal
- Family favorite (kid-approved!)
🛒 Ingredients
- 1 lb ground beef
- ½ cup chopped onion
- Salt and pepper, to taste
- 1½ cups elbow macaroni
- 1½ cups shredded cheese
(I love using half sharp cheddar and half Monterey Jack)
Sauce & Seasoning:
- 2 tablespoons cornstarch
- 2 teaspoons garlic powder
- 2 teaspoons sugar
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
Liquids:
- 1¼ cups chicken broth
- 2 cups milk
(Optional: substitute ½ cup milk with heavy cream for extra creaminess)
Optional:
- 1 tablespoon tomato paste (adds extra depth of flavor)
👩🍳 Instructions
- In a large skillet, brown the ground beef and chopped onion with salt and pepper until fully cooked. Drain excess grease.
- In a small bowl, whisk together the cornstarch, garlic powder, sugar, onion powder, paprika, salt, and pepper. Set aside.
- To the cooked beef, add the chicken broth and milk (or milk + cream mixture if using).
- Stir in the uncooked macaroni, tomato paste (if using), and the prepared seasoning mix.
- Mix well and bring to a gentle simmer. Cook for about 15 minutes, stirring occasionally, until the pasta is tender.
- If the mixture becomes too thick while cooking, add a little more chicken broth or water.
- Once pasta is cooked to your liking, stir in the shredded cheese until melted and creamy.
- Serve warm and enjoy!
