These cinnamon swirl muffins are soft, simple, and one of those recipes you’ll find yourself making again and again.
I made these on a cozy evening, and they turned out just like something you’d pick up at a bakery—without any of the fuss.
Ingredients:
For the muffins:

2 cups all-purpose flour

1 cup sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

½ cup butter, melted

2 eggs

1 teaspoon vanilla
For the cinnamon swirl:

⅓ cup brown sugar

1 tablespoon cinnamon
Instructions:

Preheat your oven to 375°F and line a muffin tin with paper liners.

In a large bowl, mix together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the milk, melted butter, eggs, and vanilla.

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.

In a small bowl, mix the brown sugar and cinnamon.

Fill each muffin cup halfway with batter. Sprinkle a layer of the cinnamon sugar mixture.

Add a little more batter on top, then sprinkle a bit more cinnamon sugar.

Use a knife to gently swirl the batter.

Bake for 18–20 minutes, or until a toothpick comes out clean.
