Easy Chicken Francese (Same Dinner, Different Plate)

Chicken Francese has always been one of my favorite comfort meals. It feels special enough for company, but it's simple enough to make on a busy weeknight.

One thing I've learned while trying to get healthier at 60 is that I don't have to cook two separate meals. My family enjoys theirs over pasta, and I serve mine over vegetables. Same dinner—just a different plate.

This easy lemon butter sauce is perfect spooned over everything!

Ingredients

For the Chicken

  • 1½–2 pounds boneless skinless chicken breasts
  • Salt and black pepper, to taste
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 2 tablespoons olive oil
  • 2 tablespoons butter

For the Lemon Sauce

  • 1 cup chicken broth, can use more for extra sauce.
  • Juice of 1 lemon
  • ¼ to ½ cup grated Parmesan cheese
  • 1–2 teaspoons minced garlic (optional)
  • Lemon slices for garnish (optional)
  • Fresh parsley, chopped (optional)
  • optional 1/2 C White Wine

Optional Thickener

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

Step 1

Slice chicken breasts in half lengthwise to create thinner cutlets. Season with salt and pepper.

Step 2

Lightly dredge chicken in flour, then dip each piece into the beaten eggs.

Step 3

Heat olive oil and butter in a large skillet over medium heat.

Step 4

Cook chicken for 3–4 minutes per side until golden brown. Remove chicken to a plate.

Step 5

Add chicken broth, lemon juice, and garlic to the skillet. Scrape up any browned bits from the bottom of the pan.

Step 6

Stir in Parmesan cheese and return chicken to the skillet. Simmer for about 5 minutes until heated through.

Step 7 (Optional)

For a thicker sauce, whisk together cornstarch and cold water. Stir into the simmering sauce and cook for 1–2 minutes until thickened.

Step 8

Serve warm and spoon extra sauce over the top.

Notes

  • Extra sauce is always a good idea because it's delicious over pasta and vegetables.
  • Taste the sauce before adding more lemon. You can always add more at the end.
  • This recipe makes a wonderful Sunday dinner but is easy enough for weeknights.
