Yesterday was the Fourth of July, and our home was filled with some of my favorite people. Both of my sisters and their husbands came over, my nephew, my kids, my husband, my mom, and one of our favorite friends that we all lovingly call "British Bob." We could honestly listen to him tell stories all day!
It was one of those hot Pennsylvania summer days where everyone spent hours in the pool, there was far too much food (the way every holiday should be!), and even more laughter. Those are the moments I wish I could freeze forever.
I wanted a dessert that I could make ahead of time, keep in the freezer, and simply pull out after dinner. So I created this Ice Cream Sandwich Cake, and it turned out even better than I imagined.
Layer after layer of ice cream sandwiches, rich hot fudge, buttery caramel, crunchy Heath Toffee Bits, a fluffy vanilla cream layer, and a light whipped topping made this the perfect ending to a wonderful day.
The best part? There wasn't much left by the end of the night!

Ingredients
Bottom Layer
- 12 vanilla ice cream sandwiches
- Hershey's Hot Fudge Ice Cream Topping
- Caramel Ice Cream Topping
- Heath Toffee Bits
Middle Layer
- 1 (3.4-ounce) box instant vanilla pudding mix
- 2 cups heavy whipping cream
Top Layer
- 1 (8-ounce) container Cool Whip, thawed
- ⅓ cup powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Arrange the ice cream sandwiches in a 9x13-inch baking dish, covering the entire bottom.
- Warm the hot fudge topping slightly so it drizzles easily.
- Drizzle hot fudge over the sandwiches, followed by caramel topping.
- Sprinkle generously with Heath Toffee Bits.
- Place the pan in the freezer while preparing the next layer.
Make the Cream Layer
- In a large bowl, beat together the vanilla pudding mix and heavy whipping cream using a hand mixer.
- Continue beating until the mixture becomes thick, fluffy, and spreadable.
- Spread evenly over the ice cream sandwich layer.
- Drizzle with more hot fudge and caramel.
- Sprinkle with additional Heath Toffee Bits.
- Return to the freezer while preparing the topping.
Make the Topping
- Fold the powdered sugar and vanilla into the Cool Whip until completely combined.
- Spread evenly over the dessert.
- Finish with another drizzle of hot fudge, caramel, and a generous sprinkle of Heath Toffee Bits.
Freeze until firm.
For the best texture and easiest slicing, make this dessert the night before serving.
