If you're looking for an easy dessert that's light, creamy, and full of tropical flavor, this Low Sugar Pina Colada Fluff is one you'll want to make again and again. With pineapple, coconut, and a few simple ingredients, it tastes like a treat but is made with lower-sugar ingredients.
I love how versatile this recipe is. It's delicious just as written, but you can easily add strawberries, nuts, or even sugar-free chocolate chips to make it your own. Best of all, nobody will ever guess it's sugar free!
Ingredients
- 1 (1-ounce) box sugar-free vanilla instant pudding mix
- 1 (20-ounce) can no sugar added crushed pineapple, undrained
- 1 cup cottage cheese, blended until smooth
- 1 (8-ounce) tub sugar-free Cool Whip, thawed
- ¼ to ½ cup sweetened or unsweetened shredded coconut
Optional Add-Ins
- Sliced strawberries
- Chopped walnuts
- Chopped pecans
- Sugar-free chocolate chips
Instructions
- In a large mixing bowl, combine the sugar-free vanilla pudding mix and the undrained crushed pineapple. Stir until the pudding mix is dissolved and the mixture begins to thicken.
- Blend the cottage cheese in a blender or food processor until smooth and creamy.
- Stir the blended cottage cheese into the pineapple mixture until fully combined.
- Fold in the sugar-free Cool Whip.
- Stir in the shredded coconut.
- Refrigerate for 30 minutes to 1 hour before serving.
- Serve chilled and enjoy!
