No-Bake Chocolate Peanut Butter Oatmeal Cookies

No-Bake Chocolate Peanut Butter Oatmeal Cookies

There are some recipes that just feel like home, and these No-Bake Chocolate Peanut Butter Oatmeal Cookies are one of them. My husband absolutely loves these cookies, and they've been a family favorite for years.

If you've ever struggled with dry no-bake cookies, the secret is simple—don't overboil the chocolate mixture. This recipe turns out soft, fudgy, and full of that classic chocolate peanut butter flavor we all grew up loving.

Perfect for summer when you don't want to turn on the oven!

Ingredients

  • ½ cup butter
  • 2 cups granulated sugar
  • ½ cup milk
  • ¼ cup unsweetened cocoa powder
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick oats

Instructions

  1. Line a baking sheet or countertop with parchment paper.
  2. In a medium saucepan, combine butter, sugar, milk, and cocoa powder.
  3. Bring the mixture to a full rolling boil over medium heat.
  4. Once it reaches a full boil, boil for exactly 1 minute.
  5. Remove from heat and stir in the peanut butter and vanilla until smooth.
  6. Add the quick oats and stir until well combined.
  7. Drop spoonfuls onto parchment paper.
  8. Allow cookies to cool and set for about 20–30 minutes.

Notes

  • Use quick oats for the best texture.
  • Be careful not to boil longer than one minute or the cookies may become dry.
  • Store in an airtight container at room temperature.

Yield

Approximately 24 cookies.
